Now, Max is carving his own path with Bloom Encinitas, a pop-up restaurant experience blending culinary creativity, music, and wine in a setting designed to spark connection.
Launching April 5, Bloom’s first dinner party promises more than a meal. It’s an immersive evening where thoughtfully crafted dishes meet curated playlists and natural wine flows under twinkling lights. Held in intimate, ever-changing venues throughout San Diego, each Bloom event is designed to feel spontaneous, soulful, and unforgettable.
“Bloom is about slowing down and savoring,” Max says. “It’s food, yes—but it’s also mood, rhythm, and community.”
Inspired by his family’s legacy and fueled by his own passion for gathering people around a table, Max aims to reimagine what dining out can feel like. The menus are seasonal, the chefs are local collaborators, and every detail — from the candlelight to the glassware — is intentional.
With the inaugural event selling out quickly, Max plans many more Bloom dinners across San Diego in the coming months, each one a new chapter in a growing story.
“Zel’s taught me the importance of a welcoming space,” he says. “Bloom is my version of that—something fresh, creative, and full of life.”
